Instructions:

  1. Prepare the Lobsters: Boil the lobsters for 8-10 minutes until they turn bright red. Once cooled, remove the meat from the shells, chop it into bite-sized pieces, and set aside. Keep the shells for later.
  2. Make the Sauce: In a pan, melt butter and sauté the shallots and garlic until soft. Add white wine and brandy, then let it simmer until reduced by half. Stir in the cream and mustard, and cook until the sauce thickens. Season with salt and pepper.
  3. Combine Lobster and Sauce: Add the lobster meat to the sauce and gently coat the pieces. Spoon the mixture back into the lobster shells.
  4. Gratinate the Lobster: Sprinkle Gruyère cheese on top and place the stuffed lobster shells under a preheated broiler. Broil for 3-5 minutes until the cheese is golden and bubbly.
