Instructions:

  1. Prepare the Scallops:
    • Pat the scallops dry with a paper towel. Season both sides with salt and pepper.
  2. Sear the Scallops:
    • Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the scallops in a single layer. Sear without moving them for 2-3 minutes until they develop a deep golden crust. Flip and cook the other side for another 2 minutes until just cooked through. Remove the scallops and set aside.
  3. Make the Lemon Butter Sauce:
    • In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for 1 minute until fragrant. Pour in the white wine or chicken broth and let it reduce slightly. Stir in the lemon juice and zest, then season with salt and pepper.
  4. Combine and Serve:
    • Return the scallops to the skillet and spoon the sauce over them. Cook for another 1-2 minutes to let the flavors meld. Remove from heat and sprinkle with fresh parsley.
  5. Presentation:
    • Arrange the scallops on a plate in a circle or line, drizzle with extra sauce, and garnish with lemon wedges and parsley.
