Truffle Risotto

Truffle Risotto is the epitome of luxury in the world of fine dining. Instructions:

  1. Sauté the Aromatics:
    • In a large pan, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
  2. Cook the Rice:
    • Add the Arborio rice to the pan and toast it for 2-3 minutes, stirring constantly, until the rice grains are lightly golden. Pour in the white wine and cook until it has mostly evaporated.
  3. Add the Broth Gradually:
    • Begin adding the warm broth, one ladleful at a time, stirring constantly. Wait until the liquid is almost fully absorbed before adding the next ladleful. Continue this process for 18-20 minutes until the rice is creamy but still slightly al dente.
  4. Finish the Risotto:
    • Stir in the butter, Parmesan cheese, and truffle oil. Season with salt and pepper to taste. If you have fresh black truffles, shave them over the risotto for an extra luxurious touch.
  5. Serve:
    • Garnish with fresh parsley or microgreens and additional Parmesan cheese if desired. Serve immediately while hot.
