Ingredients:
For the Bean Filling:
- 1 can (15 oz) black beans or pinto beans, drained and rinsed
- 1 onion, finely chopped
- 2-3 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 tsp cumin powder
- 1 tsp paprika or chili powder
- 1 tsp ground coriander
- 1 tsp oregano
- Salt to taste
- 1 tbsp oil
- Juice of 1 lime
- Fresh cilantro, chopped (optional)
For the Tacos:
- 6 small tortillas (corn or flour)
- Shredded lettuce or cabbage
- Diced tomatoes or salsa
- Sliced avocados
- Shredded cheese (optional)
- Sour cream or yogurt
- Fresh lime wedges
Instructions:
1. Prepare the Bean Filling:
- Heat oil in a pan over medium heat. Add the chopped onions and sauté until they become soft and translucent.
- Add the garlic and sauté until fragrant.
- Add the bell pepper and cook until tender.
- Stir in the cumin, paprika, coriander, and oregano. Cook for a minute.
- Add the beans, salt, and cook for about 5-7 minutes. Mash some of the beans with the back of a spoon for a thicker texture.
- Squeeze in lime juice and stir in chopped cilantro.
2. Assemble the Tacos:
- Warm the tortillas in a skillet or microwave.
- Layer the tortillas with shredded lettuce or cabbage.
- Spoon the bean filling onto the tortillas.
- Top with diced tomatoes or salsa, avocado slices, shredded cheese, and a dollop of sour cream or yogurt.
- Garnish with extra cilantro and a squeeze of lime.
3. Serve:
- Serve immediately with lime wedges and your favorite hot sauce.
